Calcium lactate is a crystallized salt which has a solidifying action, and is used in molecular gastronomy in reverse spherification. Our Calcium Lactate has a similar grain size to table salt.

In food manufacturing, Calcium Lactate is used to "calcify" non-dairy drinks.
